Weight Watchers Broccoli Burgers


  • 16 oz. frozen broccoli or 1 head of broccoli, cut into florets (including stems)
  • 1 large egg
  • 1/2 onion
  • 2 garlic cloves
  • 1/2 cup fat-free shredded mozzarella cheese
  • 4 tablespoons grated Parmesan cheese
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • Avocado oil spray (for frying)


  1. If using fresh broccoli, pulse it in a food processor along with onion and garlic until finely chopped. If using frozen broccoli, ensure it’s thawed and squeeze out excess water. If using a combination of fresh and frozen broccoli, process the onion, fresh broccoli, and garlic first, then add the frozen broccoli and pulse a few times.
  2. In a large bowl, combine the broccoli mixture with egg, fat-free shredded mozzarella cheese, grated Parmesan cheese, flour, salt, black pepper, oregano, and red pepper flakes.
  3. Form the mixture into 1/2-inch thick patties, each about 4 inches wide. This should yield approximately six burgers.
  4. Heat avocado oil spray in a large skillet over medium-high heat.
  5. Add the burger patties to the skillet and cook for about eight minutes on each side, or until they turn golden brown.
  6. Transfer the cooked burgers to a large plate lined with paper towels to absorb excess oil.
  7. Serve the burgers warm.

Recipe Notes:

  • These burgers can be stored in the refrigerator for up to five days or frozen for later use.
  • When reheating, they can be air-fried or heated in a skillet with a small amount of oil.
