Savory Zucchini Delight Fritters

Ingredients:

  • 3 cups shredded zucchini, dried and packed
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup onion, chopped
  • 3 large eggs
  • 1/3 cup coconut flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon xanthan gum
  • Salt to taste

Instructions:

  1. Shred the zucchini and place it in a tea towel. Fold the towel up and wring out as much water from the zucchini as possible.
  2. In a mixing bowl, combine the shredded zucchini, shredded cheddar cheese, chopped onion, eggs, coconut flour, baking powder, garlic powder, Italian seasoning, xanthan gum, and salt. Stir until well combined.
  3. Allow the mixture to sit for 5 minutes. Coconut flour absorbs moisture, so this allows it to soak up the liquid in the mixture.
  4. Heat a large skillet over medium heat with enough oil to cover the bottom. Using a small (1.5 inch) cookie scoop, carefully place the batter in the hot oil and flatten slightly.
  5. Allow the fritters to cook for 2-3 minutes until golden brown, then flip.
  6. Season with salt and pepper to taste after cooking. Note: If you add salt to the mixture itself, it may release more moisture and result in a soggy texture.
  7. This recipe yields approximately 10 fritters.
