Nutrient-Packed Strawberry Oat Muffins

Ingredients:

  • 12 individual fresh dates, pitted, roughly chopped
  • 2 tsp baking powder
  • 1 cup (250g) 97% fat-free cottage cheese
  • 2 cups (180g) quick oats
  • 3 medium eggs
  • 2 tsp alcohol-free vanilla bean extract
  • 250 g fresh strawberries, sliced

Instructions:

  1. Preheat the oven to 180°C (350°F). Line a 12-hole muffin tray with paper cases.
  2. In a large microwave-safe bowl, combine the dates and 2 tablespoons of boiling water. Cover and microwave on High (100%) for 1½ minutes. Stir in the baking powder (the mixture will foam).
  3. Process the cottage cheese in a food processor until smooth. Add oats, eggs, vanilla extract, and date mixture. Process until combined, being careful not to overprocess to avoid a dense texture. Add 200 g of strawberries and pulse to combine.
  4. Spoon the mixture evenly into the paper cases. Scatter the remaining strawberries over the top and lightly press them into the mixture.
  5. Bake for 30 minutes or until golden and a skewer inserted into the center of the muffins comes out clean. Allow to stand in the tray for 5 minutes, then transfer to a wire rack to cool. Serve warm or cooled. Enjoy these nutritious and satisfying muffins!
