Decadent Chocolate Fudge Bliss Cookies

Ingredients:

  • 1 cup All-Purpose Flour
  • ½ cup Unsweetened Cocoa Powder
  • ½ tsp Baking Soda
  • 2/3 cup Butter (I Can’t Believe It’s Not Butter), melted
  • 2/3 cup Erythritol
  • 1 Egg
  • 1 tsp Vanilla Extract

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, beat together the melted butter and erythritol until well combined.
  3. Whisk in the egg and vanilla extract until smooth.
  4. In a separate bowl, mix together the all-purpose flour, unsweetened cocoa powder, and baking soda.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Weigh out 25-gram portions of the dough and roll each portion into balls. Flatten each ball slightly and arrange them on a baking sheet lined with parchment paper, leaving space between each cookie.
  7. Bake the cookies in the preheated oven for 6-8 minutes, or until they are set around the edges but still soft in the center.
  8. Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes.
  9. Transfer the cookies to a wire rack to cool completely.
